Lemon Fluff Frosting

1/2 cup butter or margarine, softene
4 cup sifted powdered sugar
2 teaspoon grated lemon rind
2 to
2 1/2 tablespoon lemon juice

Cream butter at medium speed of an electric mixer; gradually add sugar, beating until light and fluffy. Add lemon rind and lemon juice; beat until smooth. Yield: 2 cups.
