4 cup sweet potatoes,cooked
1 butter or margarine
1 can cream of coconut(15oz)
1/2 cup flaked coconut(toasted)
1. Arrange sweet potatoes in well-buttered rectangular baking dish. 2. Bring coconut cream to a boil; lower heat and reduce cream to 2/3 original volume. 3. Pour hot coconut cream over prepared sweet potatoes; top with flaked coconut. 4. Bake in preheated 350'F. oven until bubbly, about 30 minutes.
