2 teaspoon whole peppercorns
4 1/2 tablespoon brown sugar; firmly packed
1 1/2 teaspoon juniper berries; dried
1 bay leaf; dried, crumbled
6 thyme; sprigs of, leavesonly
8 cloves; whole
NOTE: This is for 25 lb s of any kind of meat. Mix well then crush or pound in a mortar and use as Salt in brines or for dry Salting.
