Sweet Potato Pudding

2 eggs; beaten
3/4 cup sugar; to 1 cup
2 cup sweet potatoes; raw, grated
1 can evaporated milk; 13 oz
1/2 cup milk
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup butter (or marg.); melted
1 cup flaked coconut

Combine eggs and sugar in a large mixing bowl, beating well; stir in remaining ingredients. Pour into a greased 1-1/2 quart casserole. Bake at 350 degrees for 1 hour. SOURCE: Southern Living Magazine, October, 1980. Typed for you by Nancy Coleman.
