1/3 cup vegetable oil
1/4 cup fresh lime juice
1/2 teaspoon salt
1/4 teaspoon pepper
3 cup cooked long-grain white rice
1 room temp
3/4 cup each green/red bell peppers
1 chopped
1/3 cup green onions -- thinly
1 sliced
1/4 cup fresh cilantro -- minced
1. Whisk the oil, lime juice, salt and pepper in a bowl until well blended. 2. Add remaining ingredients. Toss to coat with dressing.
Makes 5 cups or 8 servings.
